Smoked Earl Grey Cocktail Ingredients

  • 90ml cold, brewed earl grey tea infused with gin (see below for infusion instructions).
  • 30ml ginger liqueur - we do love the Domaine de Canton French ginger liqueur
  • 1 tablespoon freshly squeezed lemon juice
  • 30ml sugar syrup
  • Wood chips for the cocktail smoker – try cherry wood.
  • Garnish – lemon and sugar
  • Garnish – lemon twist

Smoked Earl Grey Cocktail Method

  • Place sugar into a saucer, then rim your glass using a lemon wedge. Rub glass rim into the sugar and set aside.
  • To the shaker, add the tea-infused gin, ginger liqueur, lemon juice, and sugar syrup without ice and shake vigorously.
  • Add ice and shake again.

Smoking Your Earl Grey Tea and Gin Martini

  • Add wood chips to the cocktail smoker’s chamber. Place smoke infuser hose into the cocktail shaker above the liquid OR place the hardwood cocktail smoker atop the shaker. Light the smokers chamber to ignite the wood chips.
  • Smoke will start to swirl in just a few seconds. Wait until the shaker is filled with smoke, remove the hose or smoke top, cover the cocktail shaker with its lid and vigorously shake cocktail for 10 seconds to mix the smoke through.
  • Strain into your martini glass, coupe or rocks glass
  • Garnish with a lemon twist

Making Gin infused Tea

Make a strong brew of Earl Grey tea.  It is often best to use twice as much tea to your water than you usually would.  You can make a larger amount than the measurements below as the gin infused tea will keep indefinitely if refrigerated.

Method

  • To a cocktail shaker or jar with a lid, add 60ml of your gin of choice.  Any high-proof dry gin pairs well.
  • Add 60ml of your extra strong tea.
  • Shake
  • Let the flavours infuse at room temperature for at least two hours.
  • Strain the infused gin through a coffee filter or cheesecloth into your shaker
